CHRISTMAS CHOCOLATE ORANGE CHEESECAKE

This year I have been trying to be a bit more creative with the gifts I give people, so I decided to bake my family a chocolate orange cheesecake as a sort of “present” for my sisters and parents! The recipe I used is again pulled from Tanya Burr’s “Tanya Bakes” baking book and is incredibly easy to make, there actually isn’t any baking involved in this recipe. This is by far my favourite cake and every time I make it, it goes down a treat with everyone who tries it! It isn’t a particularly festive treat, but chocolate orange always reminds me of Christmas, especially with a sprinkle of icing sugar on top. Here is how to make it.

Ingredients:
-      300g double chocolate cookies 
-      100g unsalted butter (melted)
-      Zest of one orange 
-      Juice from an orange
-      250g Philadelphia cheese 
-      150g icing sugar
-      200g Terry’s Chocolate Orange (plus extra slices for decorating) 
-      150g double cream 

Recipe:
-     In a zip lock bag, crush the biscuits until they form crumbs. Mix in the melted butter, zest and juice from one orange (don’t put too much juice in, as the base will become too soggy). Press this into the bottom of a cake tin. 
-      Mix together the cream cheese and icing sugar until it is smooth. Put this to one side. 
-      In a bowl over simmering water, melt the chocolate orange. Once this is done, whip the double cream until it forms soft peaks in a separate bowl. Mix this with the cream cheese and icing sugar mixture as well as the melted chocolate.  
-      Place this mixture on top of the biscuit base and put in the fridge to set for 2 hours. 
-     Take out after 2 hours and decorate how you wish! I have used the remaining chocolate slices and some icing sugar for an extra festive touch.

I love this cake so much because you can incorporate so many different flavours into it! You can take out the orange and replace it with a fruit or flavour of your choice. I hope this is helpful to someone!
